Catering Cajun has assisted in restoration efforts in Georgia, Alabama, Mississippi, Florida, Louisiana, Arkansas and Texas during hurricanes and ice storms. We own the assets to cook 3 meals a day for 10,000 persons in a restoration environment. We have the relationships to provide turn-key staging areas complete with sleeping tents/trailers, showers, dining and laundry service.

Our seafood boiling rigs allow us to heat a variety of foods (vegetables, soups and sauces) that have been prepared in our USDA kitchens and stored in cryovac containers. This process allows us to insure freshness and quality while feeding thousands of people. Catering Cajun has over a dozen of these rigs. We also use these rigs to prepare fresh seafood onsite.
The cast iron jambalaya pot below will cook rice or vegetables for 1,000. We have several of these pots.

During Hurricane Charley in '04, Catering Cajun travelled with Georgia Power to Orlando and Wachula, Florida. With the devastaion and the lack of tents, this NAPA awning was the only reasonable cover available for several days for the Wachula crew.
